Oatmeal Prawns

For this post, I am sharing my next food recipe, Oatmeal Prawns. Our 2 older kiddos are not a fan of prawns and I have a packet of prawns left in my freezer and having a teething 9.5 months old baby who clings to me practically the whole day long, I decided to try this recipe out after seeing the fuss-free steps and simple ingredients. Without further ado, here is the recipe for Oatmeal Prawns:


Ingredients:
* Prawns (quantity up to you)
* 1 egg - beaten
* Oatmeal
(quantity up to you, more if you want to fully coat the prawns - I used 1 cup)
* Half cup of cornflour or wheatflour (I used cornflour)
* Half tsp of salt
* Oil - for frying the prawns (quantity up to you)

Methods: 
 
* Wash and devein the prawns, make sure they are as dry as possible (use paper towel to absorb)
* Marinate with salt for about 5-10 minutes.
* Coat the prawns with cornflour first
* Dipped the prawns into the egg mixture followed by coating it with oatmeal
* Heat up oil in pan.
* Fry the prawns until golden yellow color
* Remove excess oil (if any) and ready to serve (you may serve with mayonaisse as well)

 

Outcome:

I like that the oatmeals provided a nice coating all around the prawns. Maybe it's because I'm trying real hard to camouflage the prawns (so that our older 2 kiddos will eat them!) I think I coat the prawns with oatmeals a wee bit too much. Also, don't expect the prawns to be crunchy (in case you get fooled by the appearance) Other than that, it is very easy to make this dish, little ingredients, easy to follow steps. This recipe is definitely for keeps!

Pan-Fried Red Tilapia in Sambal Oelek Sauce

For this post, I am sharing my next food recipe, Pan-Fried Red Tilapia in Sambal Oelek Sauce. I bought this sambal oelek sauce from iHerb and decided to try it out on a fish dish I made for our dinner. Without further ado, here is the recipe for Pan-Fried Red Tilapia in Sambal Oelek Sauce:


Ingredients:
* Red tilapia
* 1 tsp of salt
* 2 tbsp of Sriracha Hot Chili Sauce
* Garlic - 1-2 cloves sliced finely
* 1 tbsp of Sambal Oelek Sauce
* Oil - about 1 tbsp

Methods: 
 
* Wash the fish, make sure fish is as dry as possible (use paper towel to absorb)
* Marinate with salt and Sriracha hot chili sauce for about 10-15 minutes.
* You may coat the fish with cornflour if you want to prevent the fish from sticking to your pan (makes no different for me whether I use this or not)
* Heat up oil in pan.
* Fry the garlic next until you smell nice garlic-ky smell from the frying pan. Be careful not to overfry them as it will give bitter taste then.
* Fry the fish for about 4-5 minutes before frying the other side for about 3-4 minutes.
* If fish flakes upon poking with chopstick or fork, then fish is done. Take out fish and set aside in a plate.
* Add the Sambal Oelek Sauce on top of the fish.
 


Outcome:

This is GOOD! I love this! Maybe it is the type of fish that gives out fresh soft flaky flesh but coupled with the Sriracha hot chili sauce and the sambal oelek sauce, this fish is spicy-licious and yummylicious! This recipe is definitely for keeps!

Stir-Fry Chicken with Chinese Long Beans

For this post, I am sharing my next food recipe, Stir-Fry Chicken with Chinese Long Beans. I finally had a chance to go for a quick grocery shopping (lugging our 2 older kiddos along and leaving our youngest with my MIL at home) and I passed by the vege sections a few rounds and was beating myself up while mentally scolding myself that I MUST get some veges before I head home with the kiddos.

You see, I am not a fan of vege and ever since I decided to devote my passion in cooking homemade food for all meals (whenever possible) once our 5 years old boy started his preK early this year, I told myself I must include vege in our meals no matter what. Must get kiddos to eat vege and must also show examples to them that mummy also takes vege.

Now my knowledge of green colored vege is really limited and what more at the whim of that moment, I just grabbed one of the familiar looking vege - Chinese long beans and told myself I'll figure out some recipe once we reached home. So without further ado, here is the recipe for Stir-Fry Chicken with Chinese Long Beans:


Ingredients:
* Chinese Long Beans
* Chicken boneless - cut up to small cubes, quantity up to you actually
* 1-2 tbsp of oyster sauce (you can add water to dilute the sauce)
* Garlic - 1-2 cloves sliced finely
* Oil - about 1 tbsp

Methods:
* Wash the
Chinese Long Beans, soak them for about 10-15 minutes.
* Cut off the ends, and chopped into smaller lengths (I cut about 1cm each)
* For the chicken, wash and pat dry. Cut into smaller size (I choose boneless part as they are easier for kiddos to eat)
* Heat up oil in pan.
* Fry the garlic next until you smell nice garlic-ky smell from the frying pan. Be careful not to overfry them as it will give bitter taste then.
* Fry the chicken for a few minutes.
* Add the Chinese Long Beans and oyster sauce and stir in.
* Let the sauce simmer for about 5 minutes.

I had a horrified look as I see my hubby and our 2 kiddos dig into this dish. I mean, wouldn't you be terrified knowing that you just cooked something without any recipe to follow and watching your 'guinea pigs' trying out your cooking?! Anyway, surprisingly, despite seeing the vibrant green colored vege in their plates, both our kiddos did not mention anything about the existence of green vege in their plates! They ate everything without making a fuss! I'm amazed! I'm gobsmacked! This recipe is for keeps!
